Kale, Quinoa and Pomegranate Salad
We are excited to share this colourful and nutrient-packed salad recipe that is bursting with flavour, created by one of Wotnot's favourite nutritionists and naturopaths Casey-Lee Lyons from www.livelovenourish.com.au.
This superfood filled salad is a very simple, crowd pleasing healthy dish rich in goodness, plus it's free from gluten and dairy... Yum!
Ingredients:
2 cups kale, finely shredded (stalks removed)
Extra virgin olive oil
Juice of 1/2 lemon
1 cup cooked quinoa, cooled
1/2 avocado, diced
2 tbsp fresh parsley
1-2 spring onions, finely sliced
1 small handful dry roasted almonds, chopped
2 tbsp pomegranate arils
Pink good quality salt and black pepper
Method:
1. In a large mixing bowl massage kale with a generous amount of olive oil and lemon juice really well for several minutes and allow to stand for a further 5 minutes (this helps to tenderise the kale).
2. Add quinoa, avocado, parsley, spring onion, salt and pepper and combine well. Add extra lemon juice to taste.
3. Add dry roasted almonds and top with pomegranate arils just before serving.
Optional: You can also top your salad with a sprinkle of dukkah.
